This peaberry comes to us from the Cerrado region of Brazil. The dry climate of Cerrado allows for a unique processing method, "tree dried natural". In this drying process, the coffee cherry is left on the tree to dry, protected from fungus and microorganisms in the dry climate. After drying, the cherry membrane is mechanically removed.
